Halloween Pumpkin Soup
DON'T waste all that lovely pumpkin this Halloween!
Instead, follow this super simple spiced pumpkin soup recipe which serves 4 people and takes approximately 20 minutes to make:
Ingredients
1 medium sized pumpkin cut into small chunks.
1 medium sized white onion
1 clove of garlic, crushed
200ml of single cream or coconut milk
250ml of vegetable stock (either fresh or from a cube/powder)
1 teaspoon of medium curry powder
1/2 teaspoon of cumin (crushed in pestle)
300 grams of pureed pumkin
salt and pepper to taste
2 tablespoons of olive oil
Cooking Instructions
1. Add olive oil to saucepan and place over a medium heat.
2. Add the finely chopped onion and cook until translucent.
3. Add the crushed cumin seeds, curry powder and crushed garlic to the onions and gently cook for 2 minutes.
4. Add the pumpkin and vegetable stock (can be from a cube or from fresh stock).
5. Gently boil for 10 minutes and remove from heat.
6. Use a stick blender or similar to achieve a smooth texture.
7. Add the cream or coconut milk to the soup and re-heat thoroughly until piping hot but not boiling.
8. Add salt and plenty of black pepper, to taste.
9. Serve with some nice bread.
Enjoy this lovely, lightly spiced pumpkin soup.
